Zutaten

  • 25 g Roggenmehl VK
  • 95 g Dinkelmehl VK
  • 350 g Weizenmehl
  • 10 g Salz
  • 14 g Olivenöl
  • 300 g Wasser (15-18°C)
  • 4 g Frischhefe
  • 1 Tl Malzkaffee

Zubereitung

  • Einen geschmeidigen Teig kneten
  • über Nacht im Kühlschrank gehen lassen
  • auf bemehlter Arbeitsfläche zwei mal dehnen und Falten.
  • mit dem Teigschaber in 9 Stücke teilen
  • 1 Stunde im Leihen gehen lassen
  • Einschneiden
  • Backen: Ober Unter Hitze, 250 fallend auf 230 mit viel Dampf
